This lot is a labor of precision, patience, and purpose from Jorge Rojas, a fourth-generation grower working in the remote hills of Planadas, Tolima. His farm, Finca El Jardín, sits high at 1860 meters and is home to some of the most meticulous processing we’ve ever seen. From selective hand-picking to multi-stage fermentation, Jorge's approach is both scientific and soulful — and the result is a coffee that absolutely sings.
In the cup, it's all about clean fruit and elegance. You’ll find notes of ripe blueberry and the gentle sweetness of peach tea, with a juicy, flowing body that lingers like a summer breeze. It’s delicate but vibrant — the kind of coffee that keeps you coming back, just to taste it again as it cools.
This is not your average honey process. Jorge developed his own fermentation protocol: a double-stage sealed-tank fermentation totaling over 100 hours, followed by a layered drying process that combines mechanical drying, dark resting periods, and greenhouse heat. Each step is calibrated, intentional, and dialed in to coax out clarity and vibrance.
Jorge began working with coffee at age 13, under the watchful eye of his mother. Today, he’s building not just a farm, but a future — expanding his infrastructure to support other local producers and dreaming of a legacy his young son might one day inherit.
